Solvang has a handful of Danish bakeries. I visited a different one each morning to try some fresh baked items. This morning I tried Birkholm’s Bakery.
Bear claw was soft with layers of buttery goodness. Sugar crystals on the crust gave this treat a sweet flavor.
Almond slices and almond paste on the inside gave almond flavors. Pretty good.
Danish waffle was crunchy with layers of thin pastry with buttery flavor. Sugar crystals on top added sweetness. Cream filling added creamy texture and sweetness. Raspberry filling in the middle gave this treat a fruity flavor. I loved the flavors and the textures of this treat.
Butter cookies come in a plastic pail.
Regular butter cookie had a nice crunch and sweet buttery flavor.
Nutty cookie tasted like less butter was used and walnuts were added.
Chocolate chip cookie has a nice mix of chocolate and buttery flavor.
Half and half cookie had chocolate swirls giving the cookie bold chocolate flavor.
Cookie in the center was the sweetest with hard icing across the top.
2nd layer.
Cinnamon butter cookie had a mix of cinnamon and sugar cookie sweetness with buttery goodness as the base, One of my favorites.
Chocolate chip cookie was a delicious mix of chocolate and butter flavor. Another of my favorites.
Coconut cookie was full of coconut flavor and had little pieces of coconut in it.
Almond sugar cookie had tiny sugar crystals and almond pieces sprinkled on the top give a tasty mix of sugar, almond, and buttery flavors.
Overall I loved the mix of cookies. They were fresh, crunchy, and had fresh baked aroma and flavor. Solvang bakeries are my favorite source of fresh butter cookies.

Over time Birkholm’s has been the favorite of the folks at work Soo.
Birkholm’s is delicious. For butter cookies I think Olsen’s is my favorite.
So glad that they seem to be doing well. I’ve always enjoyed this place for the pastries, cookies, and breads!
