Ground Beef Tater Tot’s Casserole / Maggie’s Creations

This one is fairly quick and easy to make for dinner. Enjoy!

 

 

2 pounds organic ground beef

1 tablespoon butter

1 sweet onion chopped

2 bell peppers chopped

1 – 10 ounce can condensed mushroom soup

1 soup can almond milk

1 – 3 pound package potato tots, thawed

Ketchup to taste

 

Preheat oven to 350 degrees. Grease a 2 to 3 quart casserole pan.

 

 

Brown beef over medium heat. Then drain off the grease and remove from pan, set aside. Using the same pan melt butter.

 

 

Add onions and bell pepper. Sauté over medium heat until softened. Return beef to the pan, add soup and milk. Stir to combine and cook for a few minutes. 

 

 

 

Line the bottom of prepared casserole dish with half of the potato tots. Add meat mixture. Top with layer of potato tots. Bake for 45 to 60 minutes or until potato tots are browned and meat mixture is bubbling. Serve with ketchup. Enjoy!

  2. Yum! We sometimes make a variation of this which is called cowboy casserole. I haven’t seen almond milk in a can before though!

    1. Sounds delicious! Okay, so the recipe calls for one can condensed mushroom soup. Once you pour out the soup into the pan, the can is used to measure the milk. As condensed soup always needs liquid added to it.
