Coop’s West Texas BBQ

Scent of mesquite smoke fills the air.  I watch smoke pouring out of the smoker.  Reminds me of some great bbq joints I visited in North Carolina.  Set the smoke free.

Sadly this is my last visit as they are closing March 17, 2024.

 

I say goodbye to Coop and order a rack of pork ribs.

 

Pork ribs were tender and moist.
Loved the flavors from peppery dry rub and the smoky flavor from being smoked with mesquite.
On past visits I tried:
I ordered a full rack of beef ribs.  You get 8 ribs.  I can usually eat 3 or 4 and save the rest for future meals.  Tender beef has a delicious smoky flavor and a bit of peppery flavor from the dry rub.  Coop’s is one of the few places where the ribs are so flavorful no bbq sauce is needed.
Beef brisket was very tender and juicy.  Delicious flavor from the smoking and dry rub.
Pulled pork was also very tender and juicy.  Delicious mix of flavors from the smoky dry rubbed pork.
Sausage had a nice snap and a delicious savory flavor from the herbs and spices.
Peach cobbler was sweet and full of peach flavor.
Loyal fans here for their last lunch.

 

Coop smokes up many delicious meats with the beef ribs being my favorite.  The pork ribs are a close second.  I will miss visiting his Lemon Grove location.  I remember the golden age when there was a line out the door, beef ribs were available, and you could order fried food from Da Chicken Coop.  It was always a pleasure visiting Coop’s as he is one of the nicest restaurant owners I have met.  Coop said he will still do catering and will appear at pop-up locations.  I hope to see you again Coop.
