I was on my way to lunch when I saw Chef Budda’s food truck.
I quickly pulled over and took a look at the menu. Fortunately I noticed items are available a la carte. Perfect for me as I didn’t want to be distracted by sides.
Fried catfish was coated in a crunchy corn meal batter. Catfish was fresh, flaky, and delicate. Loved the flavor.
Fried chicken wings had a crispy outside and tender and juicy inside. Nice blend of flavors from the marinated chicken and the batter.
Staff was friendly and got my order out quick. Hope Chef Budda parks in my neighborhood again. I’d like to try the chicken egg roll.

I hope this truck is doing well. I know mobile businesses have been affected by the pandemic since not as many office workers out and about.
Hopefully they will return after the holidays. It wasn’t busy last week.
