Growing up my mom always told me Canada and San Francisco was where the best Chinese sausage was made. I haven’t had the chance to visit Canada but I have found delicious Chinese sausage in San Francisco. One maker I found in San Francisco is Wycen Foods. They started making Chinese sausage in 1848 on Grant Avenue. Last time I visited Wycen Foods they were located on Stockton St. Now they have moved to Clay St.
New location is well lit and modern looking.
Just like the first time I visited Chinatown the sausage was on strings and hanging from hooks.
There is the unique aroma of smoked preserved meats here. I breathe deep the delicious scents and look forward to tasting the pork sausage I picked up.

It’s frost. I pulled the sausage out of the freezer for a photo then stuck it back in there. Sausage can be stored in the freezer for a year but it only last a month in the fridge.
I don’t cook Chinese sausage by recipes. I just go by instinct and taste. I can show you if you like.
