Pot roast

Ingredient list

3 lbs beef

2 lbs carrots

1.5 lbs potatoes

1 yam

1lb tomatoes

2 tablespoons corn starch

pinch of salt

pinch of black pepper

I cut up the beef and marinate with soy sauce and hoisin sauce the afternoon before cooking.

 


My slow cooker heats stuff on the bottom much faster than what’s on top so I cut up the carrots and put them in the slow cooker first on high heat for about an hour.  Next I cut up the potatoes in the slow cooker. A half hour to an hour later I cut up the yam and add to the slow cooker.

 

After an hour I take everything out then add the beef and chicken to the bottom.  Veggies go back in on top and I set the heat to low.

 

About 4 hours later I add a little salt and pepper, 2 tablespoons corn starch, plus cut up tomatoes.

About a half hour later I unplug the slow cooker and serve.

 


I don’t like cooking everyday so I made enough to have leftovers for about 3 dinners.  I used beef chuck roast but tri-tip works great too.

  2. Sounds yummy! I’ve enjoyed working at home where I can use the slow cooker as a personal chef downstairs while I work upstairs.

    1. I love how the slow cooker makes meat so tender and there is minimal mess to clean up afterwards. You should make some pot roast. It always comes out tasty. 🙂
