Rudy’s “Country Store” and Bar-B-Q – Goodyear Az

Whenever I’m in Arizona I make a point of visiting Rudy’s BBQ.

Meats are sold by the half pound and I sampled a few.

Sausage casing had a nice snap to it.  Sausage was full of flavor and little bit of spice to it.  Loved it.

Moist beef brisket was tender and a bit fatty resulting in very juicy brisket.  I loved the smoky flavor from being wood smoked and the spices used to create the flavorful bark.  Rudy’s makes one of my favorite beef briskets.

Pork ribs were tender and had a nice bark from the dry rub.  Loved the smoky aroma and flavor.

Baby back ribs were tender and juicy.  Loved the smoky aroma and flavors from smoking and the dry rub.  My favorite menu item.

Frosty Root Beer was sweet with that unique root beer flavor.  Perfect pairing with bbq.

Rice Krispie Treat had crunchy Rice Krispie’s and sweet marshmallows. Ratio of Rice Krispie to marshmallow was just the way I like it.  Gooey and sweet but not to the point of hiding the Rice Krispie flavor.  Delicious..

Rudy’s is one of my favorite bbq’s.

The combination of smoking their meats with oak and their dry rub make for some delicious bbq.

Excellent selection of soda in glass bottles.

Staff was nice and the service was very speedy.

Country Store to the right.

After I posted about Rudy’s my Yelp friend Ray F. wrote me about Rudy’s original pitmaster:

I knew Doc Holiday, the original Rudy’s Pitmaster, who created the sauses (his spelling) and rubs used by Rudy’s.  He died at age 58 about 12 years or so ago.  Be it beef, pork, turkey or chicken, he could make meat melt in yo’ mouth.  I used to laugh at him chiding me on my tender mouth and saying folks like me were the reason he invented the Sissy Sause.  He used to joke that rubs had to be course so old people could see the rub. He cook a special meal once that I was invited to and was mixing woods to encase the meats in layers of flavor.  He used post oak to start, then mesquite to get a deep flavor, then pecan to get a great aroma and finish with hickory for a sweet bark.  He was a genius!
