Shortbread Lemon bars

I’m always looking out for great recipes, especially when I’ve lost some of my favorites! When my son was a boy I made lemon bars from scratch with a recipe of my own. We always enjoyed them! 

Cut after completely cooling and refrigerating.

Anyways it’s been lost over the years so the search was on to find a close replacement. Here’s what I found so far. Sally’s Baking Addiction came super close with her lemon bar recipe. A bit on the tangy side I’d say. But powdered sugar on top and cutting them into small bite sized bars helps.

Use fresh lemons.

 

Strain the juice to avoid pulp and seeds.

 

Use parchment paper in glass pan.

I liked them enough to share my thoughts. For me lemon bars should shine brightly with lemon. These do for sure. Using fresh squeezed lemon juice is a must. The crust tastes like a super moist shortbread cookie.

Prebake shortbread crust.

 

Cool completely then refrigerate.
