Corbin’s Q

On the road past Malibu beaches were rolling hills of green.  Lovely strawberry fields tempted me to stop at a road side stand to get fresh strawberries.  Driving through Santa Maria  I stopped in a parking lot to try some genuine Santa Maria bbq.  It was delicious.

It’s not necessary to drive to Santa Maria to taste Santa Maria bbq.  Corbin follows the traditional method of cooking meat seasoned with black pepper, salt, and garlic salt over red oak.  You can smell the unique scent from the sidewalk.  I approached his bbq and breathe deep that sweet smoky scent.  Inside the scent was more muted.
I placed my order at the counter and watched as my rack of baby back ribs was cut up.  There is a choice of sweet or spicy sauce.  Both were as was promised and good.  I prefer my ribs without sauce as I thought they tasted awesome with just the flavor of the dry rub and the smoky pork commingled.  I was impressed how tender these ribs were.  I grill ribs often but they never come out this tender.
I also sampled a beef rib.  It was also full of that unique Santa Maria flavor and amazingly tender.  Next time I’m gonna visit on a Saturday which is the only day beef ribs are available.
For dessert I had a brownie.  Nice crunch on the outside.  Soft on the inside and full of flavor.  I don’t really think of dessert when I go out for bbq but this is a really good brownie.

Till my next Santa Maria road trip I’m gonna eat at Corbin’s.  Corbin is doing a great job of maintaining the Santa Maria bbq traditions.  I visited on 12/16/2017 which was Corbin’s 1 month anniversary of his first restaurant.  If you are up for a road trip try The Swiss or The Hitching Post in Santa Maria.  Those are my fav Santa Maria bbq joints.
