The Butchery

One Paseo has some great places to eat.  The Butchery is one of my favorites.  Line is long at lunch time but the staff keeps it moving.

Meat case has some very nice looking meat.
There is also a grocery store section with a great selection of snacks and bbq sauce.

Butchery Burger featured very high quality beef.  Loved the flavor of the beef and the arugula and tomato gave this burger a fresh flavor.  Very different experience versus a Wendy’s burger with the lifeless beef patty.
Beef here is vibrant with a lively flavor.  Fries were crunchy and had a nice potato flavor.
Sioux City Sarsaparilla was sweet with that unique root beer flavor I love.
2nd visit I tried the steak and fries.   Light char on the outside gave a smoky flavor while the inside was tender and juicy full of delicious beefy flavor. I was impressed by the quality of the beef and the flavors from the marinade.  Fries were crunchy and had a nice potato flavor.

I talked to a friendly employee afterwards and found out you can get that delicious steak to go.  The Meyer Ranch Angus steak is marinated and ready to toss on the grill.
3rd visit I tried the Wagyu Burger.  Wagyu beef was tender and full of beef flavor with a light char.  Salmon Creek Farms bacon was thick cut, crunchy, and had a delicious smoked flavor.  Pretzel bun had a mild flavor with a hint of sweetness.  Tomato and lettuce were fresh and crisp.  The very high quality ingredients resulted in a very delicious burger.  One of my favorites.
