When Pigs Fly

My kid told me I should open a rib joint.  I thought Soo’s Rib Shack would be a cool name for it.  When Pig’s Fly is a much cooler name.

The bbq here is much better too.  They dry rub and then smoke their meats with hickory wood.  Meats come from Brandt beef.  Much higher quality than the meats I get from Ranch 99.
I ordered a rack of pork ribs.  It was almost enough for 2 meals.  Pork was tender with a smoky component and heavy pepper flavor.  I loved eating these ribs plain  and with a bit of the original style sauce with added a nice sweet flavor.  Potato chips were crunchy and seasoned with what I think was seasoning salt.  Loved the fresh flavors.  Much better than any supermarket chips I’ve had.
2nd visit I tried a rack of beef ribs.  Smoky flavor mingled with dry rub which had a delicious peppercorn flavor.  Beef was tender and juicy from the rendered fat.  There was alot of meat on these ribs and I only managed to eat half the rack.

 

I like how they decorated this place.  Walls are corrugated steel.
There were a few BBQ Championship plaques from Stagecoach in the hallway.    If I was gonna have a rib joint I’d want one like this one.

  3. This is the the lady who told her husband she’d compete in BBQ competitions “When Pigs Fly”! I also told him I’d cater out of our house, “When Pigs Fly”. Then he said he wanted to open a restaurant and, well, you can guess what I said….honestly, by that time I was looking forward to getting the mess out of my kitchen and getting somebody else to help with the cooking and dishes! Your review makes my resistance all the sweeter and we truly appreciate fans like you. Every dish that leaves our kitchen is made with love and it feels so good to see that shine through. And the potato chips, that’s our house rub on them. Thank you!

  4. Wow that’a a generous pork and beef rib plate!! The beef looks more like St. Louis ribs?
    I’m going to check out their menu for the wings now. Was their a/c inside the restaurant?

I visited twice and ordered a full rack of ribs each time. 🙂 The beef does look like St. Luis style ribs at a distance but if you click on the thumb nail and take a look at full screen version on a big monitor you should be able to see the texture of the pork ribs is finer and the beef ribs have a courser texture. Also the beef ribs are much larger.

    I went before it got hot and did not notice if they had AC running.
